    MUSCATINE, Iowa–Since opening in September of 2019, Skinny’s Barbecue has grown quite popular among barbeque lovers and those who simply enjoy a good, hearty dinner. Cord Kleist, owner of Skinny’s, wanted to add something new to Muscatine’s dining options, and focused on creating a menu designed around Texas style dry rubbed barbecue.

    With it’s large menu and varied options, everyone who comes through the door can find something they like at Skinny’s, even if they do not enjoy traditional barbeque. “All of our meats are dry rubbed with four choices of sauce for you to choose from on the side,” Kleist explained, adding, “we have multiple different menu items to attract all of our different customers.” Skinny’s also has many homemade sides and daily specials available for diners to choose from, sending customers home happy every time.

    In its first year and a half in business, Kleist has found that Rueben Wednesdays have proved the restaurant’s most popular dish. On a day to day basis though, he says people cannot get enough of Skinny’s burnt ends. Made from cubed brisket coated in sauce and smoked for a second time, one can easily see why this dish would grow into a local favorite.

    Along with good eats, Skinny’s also offers opportunities for diners to enjoy a good meal and good entertainment together. From the beginning, Skinny’s has coordinated with PR%F Social to provide special events complete with delicious food, satisfying drinks, and top notch entertainment. Each Thursday, Skinny’s pairs up with PR%F Social to serve hot food while also offering a chance to listen to great music. For a special treat, they often join forces to provide weekend entertainment as well.

    As Skinny’s has gotten a foothold in Muscatine, Kleist has taken great pleasure in welcoming new customers and watching them grow into close friends. “I love the small town feel, the regulars that we see every week, the people that support you because they like to see you succeed,” he shared.

    To help welcome more customers to the Skinny’s family, Kleist joined the Greater Muscatine Chamber of Commerce and Industry and has appreciated having the opportunity to collaborate with them. “I wanted to be more involved and have some help from another group with getting our name out there as a new business,” he explained.
