
Try this crockpot breakfast casserole for the holidays!
Serving Size: 6
Ingredients:
- 6 whole eggs
- 6 ounces egg whites
- 1/2 cup almond milk
- 1/2 tsp. garlic powder
- 1 tsp. salt & pepper
- 1 head cauliflower, shredded
- 1/2 small yellow onion, chopped
- 3 slices turkey bacon, pre-cooked and chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 3/4 cup low-fat shredded cheddar cheese
- Dash salt and pepper
Instructions:
- Spray the slow cooker with cooking spray.
- Evenly place 1/3 of the shredded cauliflower in the bottom of the slow cooker, & top with 1/3 of the onion.
- Season with salt and pepper and top with 1 slice of chopped turkey bacon and 1/3 of the cheese.
- Repeat the layers two more times.
- Pour the egg mixture over the layers in the slow cooker.
- Cook on low for 5-7 hours, or until eggs are set and the top is browned.
